Grand Cayman - Recs?

Hi, fellow 'hounders. This Board was so helpful to me a few years ago for my trip to Bermuda, that I figured I'd check in again. I'm heading to Grand Cayman next week for a surprise trip for my husband's 40th birthday, leaving our little one behind with the grandparents in NY. We're staying at the Ritz, but sadly missing the Cookout. We will be there from Sun - Wed., so 3 dinners. So far, I've made dinner reservations at Michael's Genuine, Ortanique and the Brasserie, but am open to other suggestions. My hope is that lunch will be while lying on the beach. I appreciate any advice!
Thanks so much!!

Since you'll be at the Ritz, if you can afford it, I can't recommend Blue by Eric Ripert highly enough. We had an absolutely perfect meal there last weekend. It was one of my top 5 all-time meals. We paid about $250 each and had the three-course meal, but that was with a bottle of expensive wine, pre-dinner cocktails and dessert wine. Point being, you could do it for much less if you stuck to say, a glass of wine each. The three course was around $86 Cayman, I think.
