Truffles white or black?
Don't know whether you saw that other truffle/pasta thread, but there was a recommendation there for an aged white Rioja by Lopez de Heredia.
I've been thinking about YOUR flavor combination here for quite a while, and am coming to the conclusion that an aged Rosado from LdH would be about as close to a perfect match for these flavors as I can think of. In fact, I can taste it in my brain. (Getting hungry!)
Otherwise, I'd probably do a Blanc de Noirs Champagne. looking for a full-bodied Champagne.
