I made these taquitos using the Rick Bayless recipe linked by GHG (thanks again!). I doubled the recipe and made them in advance up to the point of rolling the taquitos, then put them in the fridge.
I brought them to room temp before frying them, then put them on a baking sheet in a warm oven until ready to serve so they stayed nice and hot. They turned out beautifully, and everyone loved them at the party. I definitely recommend this recipe!
