sauerkraut and airlocks
Since air must be excluded from cabbage as it is fermenting (to prevent surface molds) could one use an airlock instead of the weighted plate/ brine filled bags methods?
Brewers what do you al say?

Yes. In fact, the "picklemeister" is just a jar with a brewer's airlock inserted in the lid (you can google it to see photos). I'm trying to work out a home-made solution using jars with drilled-out lids with brewers' airlocks at the moment since I can't find any fermentation crocks smaller than 5 liters and I really don't need to make that much kimchee!
