Espiga Bakery - Superb Mexican Baked Goods (Raleigh)

Just off Capitol Boulevard immediately south of I-540 in the same little strip mall with the Burger King and Post Office.

This little bakery has a couple of tables. They make everything from scratch fresh daily. A nice selection of empanadas and sandwiches. Very reasonably priced and much better quality than Panera across the road.

This is a find.

    According to the website, they're Ecuadorean. I like Ecuadorean empanadas- they're small and simple. Is that what they have? They do have at least one specifically Ecuadorean item on the products list- pan de Ambato.

    Do they have any other Ecuadorean stuff, like soups or llapingachos?

    Edit: They have a Spanish version of the website.

    "Empanadas de Queso: Un pan suave relleno de queso fresco, levemente banado con azúcar."

    That's an Ecuadorean empanada.
