How long can I wait...to make sorbet
For my new year's eve party tomorrow I'm making Raspberry sorbet how long can I wait before making it, I don't want ti to be a fruit flavored rock! So, can I make it today and serve it tomorrow?
In order to make it ahead, I think you need booze and/or a ton of sugar (I prefer booze. The amount of sugar you need to keep it soft in the freezer is, to my taste, inedible). If it's going to be pretty much frozen fruit juice, you'll need to make it at the last minute or periodically take it out of the freezer and scrape it, like granita.
