tomatillo sauce advice - its sour!

i'm making tomatillo sauce for enchiladas. i broiled the jalapeno and tomatillos in the oven until nicely browned and blended with sauteed onion and garlic. the sauce was super sour so i added about 2 cups of homemade pork broth. the broth helped a lot but it is still too sour for my tastes. any advice on what i can do to cut down on the sourness? thank you so much!

  1. How about a little sugar, honey or brown sugar? Try a little and see. Also, are you sure nothing got burned....that can seem sour sometimes.

    1. The Sauce should be sour. Tomatillos are pretty high in acid unless very ripe. The roasting will reduce it somewhat but ....As stated already you can use a bit of sugar but go easy I think it would very strange if you over sweeten it.

      1. I like to sweeten tomatillo sauce with piloncillo - raw dark brown sugar. But as noted, not too much, unless you want an distinct sweet-sour quality.

        1. Did you use cilantro? A bunch in the blender and then added to your sauce should help.

            To counter act the acidity?? How? I agree that it taste good but I do not see how it will cut the "sour".
