Individual Desserts that Freeze Well?

I need to make a bunch of desserts (3-4 dozen) a week in advance of an event, so they have to be freezer friendly. This is for a casual evening concert, and they will be for sale. Other people are already making chocolate chip cookies and brownies.

Any ideas on what I could make that would freeze well, be easy to serve (preferably with just a napkin), and appealing to a lot of people?

  1. All of these freeze very well. Make sure you really wrap whatever you make.

    Rum Balls

    Caramel Crumb Bars

    Rugelach - You can freeze them raw or baked (the former works a little better IMO) and make a few different fillings.

    Sugar-Topped Molasses Spice Cookies

    Chocolate Chip and Almond Biscotti

    Dulce De Leche Cheesecake Bars - I haven't tried freezing these yet but cheesecake bars usually freeze really well. These are best served cold so you could pull them out of the freezer a liitle ahead of time.

    1. cheesecake bars or lollipops
      raspberry jam crumb bars
      mini trifles (make in plastic shot glasses and serve with tiny plastic spoons)

      1. Most graham cracker crusted bars freeze well. Personally, I freeze my Key Lime Blackberry Bites and they hold up really well.
