Oysters will last ?

Lucky enough to score a bushel of local oysters. Shucked and stored in Mason jars (covered in their liquid) in the refrigerator, how long will they last ?

"develops into fresh water which can kill the live shellfish"

And for that reason, you need to maintain and change the ice frequently, so your unshucked live shellfish is actually stored in a pan set in ice, but not as shellfish stored directly on the ice, and not swimming in fresh water from melted ice.

Yes, that refers to live shellfish. The melting ice develops into fresh water which can kill the live shellfish and impact their freshness when sold/cooked (e.g.fresh lobster)
