How long will egg whites keep in the fridge?

Apologies if this as been discussed - my search didn't turn up anything. In any case, we made a pastry cream on Friday night, leaving us with 4 egg whites which were promptly refrigerated. The egg board says the keep up to 4 days in the fridge, which seems a little skimpy. Opinions? I would like to make meringues.

    I've kept egg whites in tupperware in the fridge for at last 2 weeks with no problems.

      You can freeze them with no problems, so that would be the easiest way to go.

        I know a lot of people freeze egg whites, but for some reason I've never done it. What's the best way to defrost them, and do they behave differently when baked/cooked? Thanks.

        I've kept them up to a month. The sniff test totally applies here. If I have ANY doubts I'll toss them though.

          They really last for awhile in the frig, like weeks, but I always stick mine directly into the freezer. Most times I remember to mark the container with the quantity therein, for future reference.

            That's what I do, too - stick them straight into the freezer. I think I'm due to sort through the freezer and see just how many "1", "2" and "4" containers I have. Might be time for angel food cake.
