Where can we buy a niman bone in Boston pork butt in la? Bo ssam!
Hi chow hounders!
My husband and I just had the Bo ssam at momofuku in NYC and want to recreate it at home. We found the recipe and now need to buy the pork! We live on the west side in Venice but can travel anywhere to purchase. Also would love to know of a good koren grocery store to buy kimchi.

Seconding the motion to contact either Marconda's or Hunting Meats at the Farmers Market Grove off Fairfax. At either location, you should easily be able to find a Niman Ranch quality cut. If you REALLY want to go all out, you can contact McCalls and order a legitimate Kurobata pork shoulder there and do it exactly like they do at Momofuku, but it won't be cheap.

Slightly off-topic but have you tried the bossam at Kobawoo on Vermont? I doubt it is much like the David Chang version but, to my mind, its fantastic.

Check out Assi or Galleria Market in K-town for kimchi, good selection and quality. Also look for the salted little shrimp in bottles .
You might be able to score some pork too, they both have butchers at the meat counter.
If you're feeling adventourous, Assi often stocks sea squirts and live baby octopus.....
