Help! Need to figure out a NYE dinner menu for 8, with no oven!!
My mother (early 70's, yet hip and loves to cook) is having her annual NYE sit-down dinner party (which goes on, on average, until 4am!), but her oven isn't working and she can't get a new one delivered on time. She's at a loss on what to make, and time is ticking away!
Any suggestions would be really appreciated! Normally she would roast a couple of ducks or some Cornish hens, but not this year! She doesn't use a BBQ or a wok--she actually never makes Asian food. French, Italian, Spanish etc. are all good.
Looking forward to hearing from you!!
how elaborate do you (she) want to get?
baby artichokes with garlic butter
roasted red pepper soup with crab croutons
wilted spinach and mushroom salad
veal scallopini OR sole or chicken piccata or marsala
steamed and pan-browned new potatoes
tiramisu and sliced fruits
tons of other ways to go, but that was my first thought :)
good luck and do report back!
I immediately thought of a bolognese cooked in a dutch oven. Also, here are some braised chicken recipes...
Pan Braised Chicken with Dried Fruits and Olives (served with couscous)
And Braised Chicken with Shallots
if she has a large, heavy Dutch oven she can still roast duck or hens on the stove top...osso buco can be done that way too.
otherwise, how about a hearty meat or wild mushroom ragout served over pasta or polenta?
dessert is easier than you might think. as perk said, you can do a nice cheese course. or for something homemade, my vote would be for simple, elegant poached pears with chocolate sauce, or perhaps zabaglione garnished with shaved dark chocolate [and maybe a few fresh berries if she has access to good ones] or a winter fruit compote.
You certainly good do an Italian menu. Antipasti....pasta as a primi.....sauteed veal, chicken or sole (piccata?). And, in the Italian tradition, a salad after the main course.
And French would work, too....something that simmers on the stove all day. Great cheese course.
And lots of champagne or prosecco always helps!
