Chocolate cake with 3 eggs, cocoa... Recipe emergency!

Hi, It is my husband s birthday tomorrow. I was going to make NIgellas Chocolate clementine cake but we only have 3 eggs and 1 clementine. Usually these situations just make me pop out and buy the ingredients, but in this case, we are off on holiday travels the following day and I dont want to buy anything perishable. Can you advise a fool proof chocolate cake recipe w only 3 eggs? Other interesting ingredients in the house: almonds, rum, brandy, limes, molasses sugar, pears, apples. Other musts: simple enough to make in the morning and ice if need be in the evening, not too sweet as we have 2 weeks of holiday delights staring us in the face , structurally sound enough to travel to the pub.

This Hershey's chocolate cake gets excellent reviews on this board. Very easy, moist and delicious. Lots of chocolate flavor. Makes great cupcakes, too.

You might try applesauce...if you have that. Or perhaps a couple of tablespoons of mayonnaise if you can. I've used mayo in many cakes and they've always come out moist and delicious.
