Tamales and Ham...what to serve with it?

Ok, it's that time of year again. Christmas dinner with ham and tamales. Looking for any ideas on what to serve with it, especially any veggie dishes that are not a starch. Thanks in advance.

  1. Cut the tops off some tomatoes and remove 1/3 of the pulp. Sprinkle with S&P, fill them with a combination of herbs (oregano, basil, etc. and onion and broil them briefly before serving.
    Top with a dollop of sour cream and crushed wheat cracker crumbs.

A nice jicama salad, marinate the matchstick sliced jicama for a day in orange and lime juice and dress with a pinch or two of ancho powder, salt and chopped cilantro with extra lime juice and orange segments; or a salad of grilled nopale strips, grilled onion slices and tomato wedges with a light but garliky-olive oil dressing or a platter of lime juice dressed wedges of avocado and red onion. You should also consider serving a Mexican style green rice, with lots of cilantro, a big pot of frijoles borrachos or even pozole to start the meal, and horchata. All that with the ham will make for a very festive spread. Enjoy!

      1. With tamales, we always have coleslaw, either bought from KFC or homemade using an old family recipe.

        Finely chop green cabbage and grate a carrot. Dress with equal parts heavy cream and white vinegar, season to taste with salt and pepper. Chill thoroughly before

          If it's a special occasion and the food is Mexican I'd make a batch of pickled red onions... my family goes crazy for those.
