CABO -- Foodie Input Needed
My fiance' and I will be spending Christmas and New Year's in Cabo and looking to finalize our restaurant selections. We will be staying at one of the Pueblo resorts but are willing to travel for dinner. By way of background, we are from Manhattan so have experienced alot of very good cuisine over the years and just looking for great food and great ambience.
The last great meal we had was at Vetri in Philadelphia which was truly a delight.
Below are the ones that we are definitely thinking of trying and looking to round out the list:
+ Market Jean-Georges
+ La Fonda
Also, if there is a must-try for New Year's eve, I'd love to hear about it.

The only of the 4 you mentioned that I've been to La Fonda..short cab ride from your hotel. It is also reasonably priced and f you like bone marrow, they do a great version.
Just some general comments on the rest of your list. I'm in Boston and JG just opened a Market. It's ok, but since you live in NYC, I'd pass and stick to the mother ship. I think it's in the space that Charlie Trotter tried opening C.
The others I believe are also in big resorts,very pricey and most of the knowledgeable diners I know have been disappointed.
I like Cabo mostly for simpler locals food and think San Jose has a better offering at the high end if that's what you're looking for.
In San Jose, we had a great meal at Voila, but El Chilar and Natalia are also well thought of and there a few others.
I don't know if you'll have a car. I don't get one unless I'm going to Todos or the East Cape. Figure a $30?? cab ride to San Jose.

BTW, I don't mean to knock you're suggestions of Esperanza or Aqua. They are set in beautiful resorts and have great atmospheres; just have heard mixed reports on the food. They are a short drive/cab from your hotel. I'm assuming you're in 1 of the Pueblos on Medano Beach. If you're at Pueblo Sunset, you're too far to walk into CSL, you need to drive/cab for anyting x hotel restaurants...and I'd suggest having a car.
