Of the non-Italian, non-Mexican lunch options that are closest to the PAM, my favorite is Matt's Big Breakfast. Durant's is also nearby, but as I've never been, I can't personally vouch for it.
I'm actually heading down to the weekly "mobile food court" that sets up on the site of the Downtown Phoenix Public Market (nearly) every Friday from 11-1. The line-up of food trucks and carts has expanded and changed considerably since my last visit to the market, so I'm not really sure what all of the options are now. The DPPM site is kitty-corner from Matt's.

Arcadia Farms has a place in the museum which is very good. http://www.arcadiafarmscafe.com/pam/index.html
Pane Bianco is great. Not a good place to sit, you could grab stuff to go and sit in the entry to the Museum. The area around the fountains is very nice. http://www.pizzeriabianco.com/pane/menu.html
Cheuvront's is also nice and very close

I'm not sure if the OP's art museum trip has already occured, but just in case or for the benefit of anyone who turns up this thread in a search, I'll add a few recommendations to the good ones above.
Thai Hut -- pretty obvious what type of food; right across the street from PAM
Giant Coffee -- right around the corner from Thai Hut on First Street. Good place for dessert after Thai Hut
Blue Fin -- teriyaki bowls and the like; regrettably, it's open only on weekdays.

My vote is for Wild Thaiger. Wonderful food, fabulous presentation, and great service. Mmmmm, time for me to make another trip to the Thaiger!
