Wilber's definitely. McCall's is primarily a buffet.
Wilber's cooks whole hogs over wood in their pits out back. McCall's uses an indoor type smoker, that IIRC, one of their owners designed.
If you want what may be the best eastern NC style bbq, you should hunt out Grady's in Dudley. It's out in the sticks, but worth the trip.

Wilber's without question over McCall's for the reasons stated above. The fried chicken is quite good, too.

I'll be the contrarian, as usual. I feel like many people dislike buffets just because they are buffets. I'll take everyone's word for it that McCall's barbecue isn't the genuine article, but I liked it at least as much as Skylight Inn. I recommend Wilber's for a sandwich plus a trip to McCall's to compare and contrast. It isn't that one item at the buffet will blow you away but there are 7 or 8 very good choices. You can't go wrong with the usual standards like fried chicken and various dessert items but the most interesting find for me was something that may or may not be crowder peas - an excellent legume of some sort that is like a black eyed pea but red.
