Maine Shrimp Help

I am a member of a fish CSA and am expecting Maine Shrimp in the next few weeks. I have not had a lot of experience working with them and know they are very delicate and are easy to overcook so I would love some tips on how to best use these.

      Are you familiar with the blog Last Night's Dinner? She has cooked Maine shrimp several times and may have some really nice ideas for you.

        If they are super fresh, than raw is the way to go...at least for some of them. For steaming, when your water/beer is boiling toss in the shrimp. As soon as it looks like it will boil again, take them out. 1 minute is all they need. You can also peel them, and quickly saute in olive oil for a nice pasta sauce...or a sauce to serve on top of fish. Whatever you do will be good. These are great shrimp. Only the west coast spot prawns are better.

          The instructions and recipes are very good. We do a simple "peel & eat" and I've actually used them in a spicy pasta sauce. Deeeelicious!
