Help with ideas for ground bison
Hi, I just bought part of a bison and now I have a ton of ground bison in my freezer. I realized I don't have a wide range of ground beef type recipes and I would love some ideas. Dairy free would be preferable and if you have some that can be made in bulk and frozen in small portions that would be even better. Besides that I'm game for pretty much anything as I love all spice levels and vegetables, etc.

Bison is noticeably leaner and sweeter than beef. I like it for burgers and tacos/fajitas but have not used it for chili or tomato sauce. Since it costs more than beef, I prefer to use it so that its flavor is not covered up too much by other ingredients. But in your case, I'd do the pasta sauce, meatballs/meatloaf, stroganoff, sloppy joes, etc.
I would try anything that could be made with ground dark meat. First to mind is Texas chili (NO BEANS). Had some really awesome in a restaurant in NM. Nice and spicy. Then I would go to stuffed green peppers for the sweeter side. And I have had a bison burger; it is marvelous! Then, I think I would try a meatball stew with some both traditional and un-traditional veggies. Mushrooms, potatoes, corn for traditional and kale, onion and turnips for the un. Yeah, I am into comfort food...
