kurobuta pork chop

where can i buy this in the austin area? does anyone know the price per pound cost?

  1. Kurobuta is the Japanese name for Berkshire pork. Locally, I know Peach Creek Farm has it at the downtown farm's market for about $6/pound (http://www.peachcreekfarm.us/pork.php). I think Central Market might also sell Berkshire pork.

      Actually, if I understand it correctly, Kurobuta is actually a subset of Berkshire. So not all Berkshire qualifies. And if we want to be really academic, to truly quality, I believe the pork must be raised in Japan.

      That said, as Brian mentioned, you can get Berkshire locally. In addition, Lobel's, in NY, used to offer Kurobuta (and they still might), though I'm not sure if it's the real deal. Though it's certainly not local.

        I see. So this is sort of like the relationship of Kobe and Wagyu beef.

          that's my understanding:
          kobe is the "brand name"/provenance/whatever, and wagyu is the breed.
          same goes for kurabota/berkshire.

    2. I'm pretty sure Central Market stopped selling it. At least we no longer can find the berkshire baby backs we'd grown so fond of. I'd love to find a place that carries it daily, as the farmer's market will sell you frozen only, and only once a week :-(
