Where can I buy red pepper paste (with oil) like what is given in Chinese restaurants? Do they sell this in Asian food stores? Can anyone recommend a brand? I'm in North Bethesda. Thanks!

You mean the condiment with the fried chilis in oil? If that's what you're looking for, you can buy it in any Chinese grocery. Look for Lee Kum Kee brand Chiu Chow Chili Oil.

Saw some in Whole Foods the other day on the Asian foods shelf. Surprised since it's hard to find the chili oil with the pepper flakes still in it even in big Asian grocery stores. Will have to grab one next time I go.

Have you tried making your own? I used to make batches a few years ago. If I remember correctly, you just heated up a quart of peanut oil in a wok just until it starts to smoke, then dump in a pound of crushed dried chilis and RUN! I recommend doing this outside, don't ask me how I know.
