Pate de campagne

Monica Dec 6, 2010 06:24 AM

or the country pate.

Ever since I tasted the country pate in France years ago, I have been searching for good pate for years. Most gourmet supermarkets sell pate usually from brands such as Les Trois petits but these lack that deep rich meaty flavor like the ones in France.
So is there a store (or restaurant) that makes really good country pate?

Bar Boulud serves a country pate with foie gras, truffle jus and port that is delicious.

You should also consider the degustation de charcuterie to share. Bar Boulud is great for that sort of thing.

Note that the degustation de charcuterie does not include the pate grand'pere, it has the grand'mere which is chicken liver. Also don't have the fromage de tete which is a personal favorite

I ordered the bigger of the 2 platters and had all of those things: grand'pere, grand'mere, head cheese.

I think the secret is to drink lots of red wine which will melt the fat in the pate ........!

I drank alot of wine and had lots of good pate and other fatty stuff in France almost non stop. When I came back from France, I had lost at least 5 lbs...strange..maybe it's the air, maybe it's the wine...I don't know what it is but every time I come back from France eating all the goodies, I never gain any weight. I truly do believe it's the processed food in America that makes people fat.

I agree, in Argentina I had a steak for lunch and dinner accompanied by a caprese salad, drank Malbec and lost weight. Natural foods are not fattening. Also snacking is bad.
