Has anyone out there taken a course for chef knife skills in Montreal?

I haven't, but the cookbook store in Westmount (Appetite for Books) often gives courses on basic knife skills. They don't have their winter schedule up yet, but I imagine it'll be posted in the next month or so.

Talking about Appetite for Books they are carrying a new book called "The complete Book of Knife Skills" by Jeffrey Elliot (Head of Chef relations at Henckels ) It is easy to follow and very good. Worth the price.

The store's new sked is up and not only do they have several Knife Skills courses coming up, they also offer Knife Skills #2, where you learn how to debone a whole chicken. Neat!
