Pad Thai

I remember my first pad thai as an elegant assemblage of tastes and textures, crunch from bean sprouts and peanuts, integrity in the herbs.. Now I find that pad thai is a glop of noodle mush. Where is the version of my memory?

I agree. Especially when you're getting take-out because it sits for a while. There are some decent places near curry hill, but I can never remember which is which!
