asador near madrid

We are looking for a great asador with roast lamb experience near Madrid (sepulveda, segovia, etc) Have looked extensively at Maribel's guides (thanks Maribel - they are awesome!) and loved the idea of Figon Zute el Mayor. However, can't find any other info about it. We will be in Spain in December. Maybe that is not the time for roast lamb? Help please!

I ate at both El Zute (the original; it looks like there are now two places under the same umbrella in Sepulveda) and at El Yantar in Pedraza. Both remain among the best meals of my life.

I asked about the season as well (I will be in Spain in January) but am still not clear about this. They are apparently open, so the lamb must be good!

If you have a chance to go to either place--Sepulveda or Pedraza--go! Pedraza itself, while gussied up for weekenders, is a gorgeous village and there are some good places to stay.

While Nazareno in Roa remains my favorite Asador (and Mauro in Penafiel my second) I wholeheartedly agree with the El Yantar recommendation in Pedraza. As Erica says the location is brillant and the lamb is among the best in the country.
