Solo before Rock and Roll Marathon

Hello Vegas hounds-
I am visiting from DC for the Rock and Roll Half marathon. I am getting in on Thursday night and need some suggestions for lunch and dinner on Friday. I will be staying at New york New York (Thursday) and Luxor for the rest of the weekend. I am happy to walk a bit (since I should be in shape for that kind of distance). I am looking for something distinctive and a spot where I could enjoy people watching and have a fun dining experience alone. I would like to keep it below $40 per meal but no limitations on cuisine. The only restriction is that it has to be a somewhat healthy choice (no steakhouses, burger joints, really fatty meat like foie, lots of white flour, etc). Please help!

    You should be able to get the desired lunch at RM Seafood (downstairs) at Mandalay Bay.
    http://www.rmseafood.com Dinner might strain your budget but the Cioppino is !@$% awesome.
    Wichcraft in the MGM has affordable, for Vegas, creative sandwiches and definitely fits on the "people watching" requirement.

      Thanks for the suggestions. That's wild because I didn't get to check this before I left but the highlight was RM Seafood, happened upon it by accident!

          We were not pleased with RM Seafood - meal was mediocre and service was horrid.

          The run was fun.

          Dinner Sunday night at Craftsteak made up for it.
