Middle Eastern and/or Moroccan Cuisine Cooking Classes in the City

I am interested in taking cooking classes re Moroccan or Middle Eastern cooking techniques. Can anyone suggest any schools or individuals who offers such in Manhattan, Brooklyn or Queens? I'm a pretty experienced cook so I am looking for a place that would offer a serious experience - not just looking to spend an afternoon learning to make cous-cous. Ideally, the class would extend over more than one session and would focus more on techniques than recipes. Any suggestions would be appreciated.

You might look to see if the Natural Gourmet Institute has any classes that interest you. I took an Ethiopian cooking class there and thought it was very well done.
