Steve, you should check out Good Luck on Anderson Ave. It features a chef's table option with three different formats ranging from 3-5 courses. I'm not sure if they have set wine pairings, but their cocktails are very good and I'm sure you could arrange something with the restaurant beforehand as long as you inform them of what you want.
I recently ate there over the holiday weekend and am already planning another family meal at the Chef's Table for their seafood format. My blog has a full post with pictures regarding this meal.

Just booked the Chef's Table at Good Luck for a five-course nautilus menu. Will be sure to report back on my experience.
Btw, I know it's not a Chef's table per se, but I recently enjoyed a six course tasting menu at Warfield's at High Point in Victor. We passed on wine pairings, as we ordered three bottles of wine, but we found the food to be very good.

Thought I'd report about my experience with the Chef's Table at Good Luck. Opted for the 5 course Nautilus themed menu. Corresponded with Chuck several times to create a menu that would accomodate my family's wishes. There was some flexibility in ingredients and they were able to accomodate allergies.
Arrived at the restaurant a few minutes early and grabbed cocktails until the rest of my party arrived. Corkage fee is a mere $10/bottle so we decided to bring a Dry Riesling and Sauv. Blanc. The rest of my family arrived and all started with a cocktail while our hostess attended to us. There was a custom menu for each of us upon arrival and we were seated adjacent to the open kitchen and treated to a nice view (for those who like seeing a kitchen in action.)
Our first course was a Salmon Crudo. Originally, this course was to be Tuna, but due to weather in Boston, they were unable to get certain ingredients. The salmon was fine and tasted good with the ginger and scallion paired with it, but the fish itself contained little flavor.
The second course was a Seared Scallop with Artichokes. I really liked this dish. The scallops were perfectly seared and cut in half and tasted great next to the artichokes and white beans.
The third course was a Homemade Spaghetti with Lobster. Each bowl contained a ball of freshly made pasta which was very good, along with a claw and some tail meat mixed in with a tomato sauce. The sauce wasn't as acidic as I would have imagined and I particuarly enjoyed the chunks of fresh tomato intersperced throughout the dish to give it a touch of sweetness. The lobster was well cooked and and this was seemed to be a favorite with my entire family.
The last savory course was a Seared Halibut with Baby Root Vegetables. The halibut was a tad overcooked but remained moist and the veggies were nice and sweet.
The first dessert was a Meyer Lemon Tart. The tart came topped with a meringue and a berry sauce with some candied lemon. The tart was good, but a tad too sweet, although it was a fine choice to cleanse the palate.
The final dessert was a Warm Chocolate Cake with Homemade Vanilla Ice Cream. Safe, but good, the cake was similar to the ubiquitous molten chocolate cakes featured at some many restaurants, only better. I'm not even a chocolate fan, but I still thoroughly enjoyed the dish. My family, chocolate fans, especially loved this dish.
Chef Martello stopped after our meal to say hello and see how the meal was. He spoke with us about their seafood purveyers (Boston) and where he sources his vegetables from. He was extremely engaging and enjoyed discussing food in general. Cost before tax and tip was about $77/person but reasonable considering the food. I can't wait to return here in the future when they are able to acquire langoustines. Overall, the Chef's Table is a truly unique experience, perfect for any foodie in the Rochester area. I'd love to hear about other people's experiences with the other menus.
