Calphalon roasting rack and oven temp
I am planning to try Alton Brown's turkey roasting method with my TJ's brined turkey.
The recipe says to start off at 500 degrees, and then lower the heat to 350 after 1/2 hour.
I just bought a Calphalon roasting rack (I have my own roaster which can withstand high heat) and the Calphalon rack info says it can only withstand temps to 450 degrees.
Do you think I can risk putting the turkey on that roaster and putting the oven temp to 500, or should I just reduce the temp from Alton's recipe to 450 and maybe let it stay at that temp for 45 minutes instead of the 30?
I did Alton Brown's recipe two years ago, and had to turn down the initial roast temp, as the turkey skin was getting too dark. This year I plan to do 450 roast for 30 min then drop the temp. Wish I had a definitive answer, but I don't think it will hurt you to roast at 450. Good luck and happy thanksgiving!
