So by crunchiness you should be making sure that you are asking for bi bim bap dolsot (in a Stone pot) and Jeon Ju would be the place to get it. They do a Seafood version and a a Veggie Version which you can make vegan by not adding the sauce which has fish sauce in it.

I used to go to Jeon Ju regularly but think the quality has slipped in the last two years. Their dolsot bibimbap never had much nurungji (crispy rice) and now it has practically none. The best dolsot bibimbap I've had in LA is the seafood dolsot bibimbap at Seongbukdong -- great seafood and _lots_ of nurungji. I just wish they did a kalbi version.

Thanks for the reminder of Seongbukdong! It's been on my list and now that I know they have seafood bimbimbap, it's even higher on my list....
I will say though, I have been a regular visitor to Jeon Ju and have always found their bowls to have plenty of krispies.... here's a picture of the last bowl I had in May...

Also, I love their Banchan... they continue to offer some of the yummiest one in town. These were some noodles that the set included that same visit...

I admit I haven't been back to Jeon Ju in a year or so. I'll definitely have to try again -- their kimchi and kalbi dolsot bibimbap is still very good even when they aren't on form. Your photo shows more nurungji than I remember seeing on any visit!
I'm looking forward to hearing what you think of Seongbukdong. Whatever you do, don't miss ordering either the kalbijim or the braised mackerel (though both on the same visit would be a serious hit -- or a lot of leftovers).
