Just read somewhere that Gerard Besson is retiring in December.
Any info available on the chef who will be replacing him?

It looks like it will be taken over by Kei, a young Japanese chef protégé of François Simon.

It's not clear that he's retiring. But he is selling the restaurant. To Kei indeed.

and what kind of chef is Kei?
can he be expected to maintain the very traditional type of cooking so well executed by GB?

would be a shame if he does retire, we had an absolutely enjoyable game tasting menu there

My little finger tells me he's not absolutely retiring. The rumor has it that he'll be partly present in another restaurant. Stay tuned though there may be some time before I get more news.

Good news. I'm a big fan of Besson's cooking: keep us informed. Thanks.
