There are many exciting, new and clever options in the Old Town Scottsdale area, several are concentrated right on one street within walking distance of the mall.
FnB - Just celebrating 1 year open. Receiving national press for their Braised Leeks. Delightful, welcoming environment.
Marcellino Ristorante - Right across the street from FnB. Not a new restaurant, but a new location in Old Town. Top quality Italian fresh made pastas. Opera singers on the weekends.
Tapas Papa Frita - New Spanish restaurant right above Marcellino. Festive atmosphere and solid quality tapas.
Lee's Cream Liquer - a new 'adult' ice cream shop just a few doors down from FnB. Very clever idea (although I don't personally care for booze & ice cream). Enamor is offering $10 for $5 today.Iruna is on the other side of Scottsdale Road and is another new Spanish tapas spot that I'd describe as more 'hip' than Tapas Papa.
The Mission is not new, but has very good quality "Modern Latin".-----

Don't forget about Sam Fox's many restaurants in the area.
I particularly enjoy the menu at Culinary Dropout. I would definitely put that on your list. It's fun, it's hip, the menu has some killer stuff for reasonable prices. Try the pretzel ball appetizer. Picture below.
Modern Steak is across the street in the Fashion Square Mall. It's a little more fancy/pricey but pretty darn good steakhouse.
If you have a car and are in the mood for Mexican, head up Scottsdale Road and hit up Blanco Taco at the Borgata. You can't go wrong with anything you order there. And the tequila menu is pretty expansive.
For a quick/cheap lunch head to Sauce. I love the sausage and caramelized onion pizza.
He also has Olive and Ivy but I haven't eaten there yet... I hope to try it soon.

The usual question is - where are you staying? This might seem dumb, but, Scottsdale is oddly shaped, and sometimes people are actually staying in Phoenix :^).
Also, what do you like / dislike, and what's your budget?

re: jaticker
That's a good location if you want to eat dinner close to where you are staying. I like MesaChow's list. Some other choices you might research are Posh, Cafe Zuzu, and Petite Maison.
If you're up for a short drive into Phoenix. I recommend Noca.
