Ideal Side Dish for Potato Soup?

I'm making cream of potato soup tomorrow evening and looking for a good accompaniment, preferably something fairly simple. Any ideas?

  1. Escorole salad with Bacon, Chanterelle and a poached Egg on top?

      Hmmm. Escarole with bacon. Mayhap.

        figured that since the soup has no protein the bacon and egg would make a more complete meal. The Escarole and vinaigrette to cut the "sweetness" of the potato and cream. Chanterelle because they are plain delicious and cheap this year.

      3. Dirty, I mean Perilagu, we had potato soup tonight with mufulatta, but y'all might be trying to excercise a little more pre-holiday self-control than we are. It was dang good, though; the sharpness of the broken olive salad was a nice foil for the creamy soup, and I sided it with some romaine tossed with oranges, sliced onion and orange vinaigrette. Chefj's idea sounds awfully tasty too; I'm a sucker for anything involving poached egg and greens.

          I might consider a muff, but the olive relish I make has to macerate (if I may be so bold) for several hours. Don't have time for that, I'm afraid. But I'm sure a pertata soup spiked with cayenne (which is the way I like it) and a muffaletta would be a spankin' good combo.

        2. The first thing that came to mind was BLT's. Simple & so delicious.
