How far in advance can I make a cake?

I'd like to make my son's birthday cake and then bring it with me to NY for Thanksgiving. We're doing his birthday cake as the desert.

If I bake it today and ice it tomorrow, is that too early?

What's the best way to store it - Do i put it in the fridge or leave it out on the counter? Do i put it in a rubbermaid container or a box or just out... i've really got no idea.

I usually cover it up and put it in the fridge but it always seems wet when i take it out.

      Betty Crocker gluten free yellow cake and Wilton's white frosting.

      Normally I just make my favorite sponge cake and chocolate frosting but this has to be gluten free and that's the easiest way for me to do it. Suggestions?
