Vegan/vegetarian Cornbread or corn muffins?
I am trying to be politically correct in accommodating my vegan, vegetarian, and kosher guests for the upcoming holiday. All of a sudden, I realized that the stuffing I had planned calls for cornbread, which contains eggs and milk. While I could go vegetarian and have eggs (not milk for the kosher ones), it would be nice to go vegan so everyone could eat it. Can you use soy milk or another substitute? What would take the place of the eggs? Thanks!
