help tonight with sauerbraten cube steak issue
I defrosted what I though was stew meat and mixed up the marinade to make sauerbraten, only to open the paper-wrapped meat and see that it was actually cube steak, like what you make chicken fried steak with. Oops. So on an impulse I just went ahead and threw it in the marinade. It's time to make it tonight-- any chance this will work OK? I was just going to roast/braise it as my recipe suggests but for a shorter time.

I see no reason why this wouldn't work. When you take the meat out of the marinade you will certainly have to dry it well before browning it. And you're right about cooking it for less time. I think it might be good to brown the meat, take it out of the pot, and put in everything else you would use. Let that cook for a good while and then add the meat back. It might be good to add some beef stock to "beef up" the flavor since you won't get as much from the cube steak as you would have from the stew meat. (Maybe this is the time to start writing something on the label before you throw meat into the freezer:)
