My Shrimp Fried Rice Recipe
I decided to try to make a decent shrimp fried rice recipe and need some reviews to anyone who is interested. If you have any questions or comments then feel free to share them.
J's Shrimp Fried Rice
8 ounces frozen raw or cooked shrimp, shelled and deveined if necessary.
1 tablespoon oyster sauce
1 tablespoon soy sauce
1 teaspoon sesame oil
1 teaspoon cornstarch
4 to 5 tablespoons of oil for frying rice
4 Cups of cold 1 day old cooked rice, grains separated well.
1 medium white onion medium diced
2 green onions
3/4 cup frozen peas and carrots, defrosted
3 eggs beaten (optional if you want eggs in your fried rice or not)
1 tsp of sugar
soy sauce to taste
1 tsp of sesame oil for the rice
1/4 tsp garlic powder (optional)
1 to 2 tsp ground Turmeric
1/4 cup chicken stock
Thaw out frozen shrimp under cool running water and peel and devein if necessary unless you have purchased alreaded cooked peeled and deveined shrimp.
Pat dry the shrimp, in a plastic bag add in the oyster sauce, soy sauce, sesame oil, cornstarch and shrimp and let it marinade for 15 minutes.
Dice your white and green onions and set aside.
Over medium-high heat add in a tablespoon or so of oil and add in the shrimp, peas, carrots, and white onion. If you have decided to add garlic then add that in now. Stir fry this for 2 to 3 minutes until shrmp is cooked.
Next move the shrimp and vegetable aside in your wok or pan and add in another tablespoon of oil and add in the beaten eggs and cook them until scrambled and blend with the shrimp and vegetable.
Add in the 4 cups of rice and to that add in the sugar, sesame oil, turmeric and soy sauce to taste. Stir all the ingedients well together and make sure everything gets through the rice.
The last thing your going to add is the chicken stock and green onions and after you add that stir it for one minute and bring the heat down to medium low and let it steam for about 2 to 3 minutes.
After that load it onto your plate and serve as a side or main dish.
