Kalu Asian Kitchen in Charlotte
I must preface this by saying that my company sells him the bulk of his wine and sake. . . .
I ate there last week with the owner of NY Mutual Trading Company who is the largest importer of fine Japanese sakes, foods, and materiel from Japan. Brian Emporer has used them in all of his restaurants.

Mr. Emporer is planning a month in Kyoto after the first of the year to study for a month at the premier restaurant in Kyoto (average price $1,000 per person) can't wait to see what he brings back.
This is a place to take your time and be educated in Japanes fusion cuisine. If you do it properly, you will not be disappointed!
