For Italian downtown, I would go with Panzano in the Hotel Monaco. A nice compromise between Italian and steak would be the Mediterranean-ish Rioja (owned by the former chef of Panzano). Great pastas…and a filet of beef currently graces the menu. OpenTable shows that they’re both open for dinner on 12/24. For steakhouses, a local option is Elway’s Downtown in the Ritz-Carlton (or Elway’s Cherry Creek if you feel like getting out of downtown). There are several high-end steakhouse chains downtown like Capital Grille, Morton’s, The Palm, and Sullivan’s, as well as Rodizio Grill and Fogo de Chao (Brazilian steakhouses). There’s also The Broker and the Denver Chop House. Something unique and independent that might fit your meaty needs (with the twist of many interesting dipping sauces to choose from) is Vesta Dipping Grill. Something historic and kitschy (but not upscale) near downtown next to a light-rail stop is The Buckhorn Exchange. If you really feel like driving for your steak, the DTC has Shanahan’s, Brooks, and Del Frisco’s. Most independent restaurants of the non-steakhouse variety in Denver have at least one big slab of meat on the menu if you’re looking for less traditional/more creative spins on steak and accompaniments.
