Pareve Cream Cheese Frosting
I just beat together Tofutti cream cheese and powdered sugar, with a bit of vanilla or almond extract (or any flavor to match the cake). No real recipe . . . probably about half the container of cream cheese and about three cups of powdered sugar, give or take. Just beat it together until it seems the consistency you want it. Too stiff--add a drop of soy milk, too wet--add some more sugar.
