Pre-cooking and freezing veggies for T-day stuffing?

I got some lovely celery and leeks in last week's extended season haul from our CSA. I'd like to use them in the holiday stuffing, but i'm not sure that the veggies will be at their best three weeks from now...can I saute them in butter and freeze them?

    I sautee and freeze onions all the time.. so I'm sure it would work.

    Leeks usually stay in my fridge for about a month. Celery lasts for a long time if you wrap it in tinfoil.

      Sure. It might change the texture of the veggies a bit, but by the time they are added to stuffing and baked, that shouldn't be noticable.
