On lobster it's the segment proximal to the claw. On blue crab it seems to be ,according to Googling, the proximal connecting of the legs to the shell. Since the Dungeness is larger than the blue that pre-claw segment is much like the lobster. I just saw a Food Network show where the lobster rolls at on New York spot were made using only the claws and knuckles. I can't imagine any Bay Area place so specialized as featuring knuckles but if they discard the rest of the beast please contact me via this board. Have aioli and sourdough, will travel.

Incidentally I just mentioned to my wife that Buster had a brother named Knuckles and the Posey family favored the old fashioned names.

Yeah, I am familiar with the lobster and blue crab parts but never heard it applied to Dungeness. I have never seen a place that offers just knuckles, claws yes,but knuckles no.

I'm a little confused, why would you want only the knuckles??.... To me, the back fin (the body) is the best part of the Dungenese, and a lot more meat too.
