Passion fruit puree
Did you post this to the Manhattan board yesterday?
Depending on the number of fruits you have, this is based on three, scoop out and combine passion fruit pulp, seeds, 2 Tbsp. sugar and 6 Tbsp. water in a saucepan. Heat up till the sugar is dissolved. Let the mixture cool down a little before pureeing in a food processor. Sieve puree through a fine sieve to get rid of the seeds. Done. Just that simple.
When you don't have the whole fruit, you can find passion fruit puree in supermarkets that cater to Latino consumers, in the freezer section; Goya is a commonly found brand in the NYC.
