Replacing Gorgonzola cheese?

I have a recipe that I would really like to try, except I hate gorgonzola, and every other blue cheese, and goat cheese, all goat cheese. What other cheese would you use with this recipe? http://cookingwithchristen.wordpress....

      Ooh, that's a good idea, I just bought a big hunk of English cheddar that's really delicious!

    2. I suspect that part of the point of Christen's recipe IS the blue cheese.

      But, judging by the rest of the ingredients, I think maybe a peccorino (Italian sheep's milk cheese)? or perhaps good-old-fashioned strong/old cheddar (always a buddy of bacon).

        I thought that too (the blue cheese being integral to the dish) but I just really don't like blue cheese.

      2. Sharp, aged cheddar or gruyere, or a mix of both. It won't the same as the recipe, but it will probably still be REALLY good!
