Bitter zucchini

I just bought some pretty medium sized organic zucchini at the farmers market. i sliced it and pan fried it in olive oil and it's super bitter. I thought maybe it was the olive oil so i tasted it uncooked and it's still bitter! why? anyone have a clue?

    are you sure it's zucchini? there are some chinese veggies that look similar but are bitter in flavor. i cook zuke quite a lot and have never experienced this.

        I've had that happen with zucchini from my garden this summer; what I do is after slicing it, I soak it in salted water for awhile then drain well before cooking. This normally rids the bitterness.

      Yes zucchini can be bitter. I try to stick with small ones to minimize this. You can salt the zucchini to extract the bitter juices. Eggplant has the same problem.

        so i salted my zucchini, drained and rinsed. rinsed a lot. what did i get? super salty zucchini that was so salty that i ended up tossing it out. what went wrong? and it was super bitter as well. solution? i'm tossing the zucchini out!

          Did you squeeze it? That plus a rinse gets rid of most of the saltiness (at least in my experience).

        Try buying the white/light green variety of zucchini, it is tiny and roundish. I find the green ones can be very bitter. Look for smaller ones in this variety that are light green in colour.

        Sometimes it's just the peel that is bitter, but it's kind of annoying when you want to make something and they're useless.

          I bought some organic zuicchini from WF and was it ever bitter. UCH! Went back to the non-organic zucchini. Haven't had a bitter one since. I , too, avoid the big ones and go for the smaller to medium size zucchinis. You would think that the organic variety would taste better, but it happened twice, and that was it for me.
