Bill the Butcher, "Coming Soon" to Edmonds

Saw that they were working on the building last week, when I was in downtown Edmonds to get some cheese from the Cheesemonger.

    That is good news for Edmonds. Wonderful meats. Pricey yes, but so is most any meat raised humanely. The answer in our house has been simple: eat less meat. Better for the world and our waistlines anyway.

      i jogged by it the other day (I live nearby). Interesting. My friend works for one of their locations. I know some Bill the Butcher Haters though, too. I really don't like to get in the middle of that too much and i can't afford their meat prices on a regular basis, so i will probably just keep jogging by!
      But i think it's great Downtown Edmonds is getting more interesting shops to make up for Old Milltown getting torn down. And i can afford Bill's jerky (sooooo good).

        i'd never heard of Bill the Butcher until about a month ago when i was in redmond. i bought a
        1-rib steak. dry aged, organic, free range, etc. etc. etc. $16.95 a lb. but it was delicious! the
        1-rib steak was about 2 lbs, so was 3 days worth of meals for me. the stop in redmond was a quickie stop for me. when they open in edmonds, i will spend more time, to see exactly what is carried.

          i am more of seafood gal...i am not the best at cooking a steak. I can do liver jut fine, but i would rather learn with cheaper meat than with premium, you know?
