i have some raw foie gras, some black truffle, and wild mushrooms. what should i make?
i'd like to make a real meal, not just a heap of indulgence.
i know i want to do an egg ravioli and foie ravioli with truffle...and something with some of the foie seared.
If it's a whole lobe, split it. Make ravioli with the foie & truffle shaved over the top - delicious, simple yet extravagant.
With the other half, sear it, serve it over some crostini with the wild mushrooms reduced to a ragout over it.
You should make....a point of inviting someone you REALLY like over for dinner! Sorry, that's not what you wanted to hear, I'm sure.
I'd make a wild mushroom risotto and shave some truffle on top, and sear some slices of foie to place on top, as well. Though that sounds way too much like a heap of indulgence. Sorry, I'm no help at all.
Both suggestions sound great, as does your idea, and your ingredients are certainly a memorable dinner in the making.
