Roast wild turkey recipe?

Anybody have a good recipe (or advice) for roast wild turkey? Doing something different this thanksgiving. I figure what I lose in meat I can make up in side dishes!

I don't have a recipe, per se, I just prepare wild turkey in essentially the same way I prepare a domesticated bird except that I prefer to brine a wild turkey to obtain a better moisture balance in the meat. Additionally, wild turkey does not have the fat content nor the full heavy breast that you find in the supermarket variety so be very careful not to over cook it. A dry tough bird would be a great disappointment at the holiday dinner table.

    1. My brothers rule for serving wild turkeys is Always Cook Two :-).
      Of course, that means he has to shoot at least two during hunting season ...

      1. given how much more (drastically more) wild game is than domestic, you might consider barding the bird (laying a lattice of bacon over the carcass prior to roasting) I do that with pheasant, even commercial pheasant.
