Tasso, Andouille, Boudin in metro NO?
Does such a thing exist? Or do I have to drive back home (Avoyelles Parish) to get it? I want to make a chicken and sausage gumbo this weekend & maybe have boudin as an appetizer. Someone told me to look on the Westbank? I have never been to any of the spots in LaPlace that people recommend (although I have heard mixed reviews from folks I know) Please help. Much thanks!!

What is your recipe for the gumbo. Do you make your own roux. I hate making a roux. I use Zatarain's roux mix and can't tell the difference.
