Pork fat

I'm looking for an East Bay source for pork kidney fat to render for leaf lard. Any help will be greatly appreciated.

    Call 3 days ahead and ask butcher to save up some fat for you. He knows what to do.

      Do you really want to render your own lard or do you just want leaf lard from a known source? If the latter, Fatted Calf sells an excellent quality leaf lard.

        Um. I have a problem with $10/lb. so, yes, I'd like to do it myself. I've done it before with some combination of back fat and pig fat from unknown locations. It was easy to do and tasty and the crackling byproduct was a real treat.

          Call Cafe Rouge and ask. I believe they sometimes break down whole pigs. The problem is that most people that have it , use it. Also, have you called Prather Ranch or Marin Sun?
